I'm just really starting to get into the Bible like I should. I'm currently trying to get over a crisis of faith right now and well, I began to wonder: Why haven't all of the apostles written a book in the Bible?
I would be especially interested to have read up on Thomas's experiences while traveling with Jesus. Does anyone know why? Or have some sort of reason?

Probably because most of them were illiterate and depended on oral tradition. The Gospels were written by - Matthew - A tax collector who almost certainly was educated. Probably for the same reason that not every that has a Christ-centered experience is compelled to write about it I guess.
Some people love to write, Paul is a perfect example of such and why we have so many of his letters.

JESUS and EYEWITNESSES by Richard Bauckham (2008)
Its a long read but makes the interesting case ( among many other points) that when the various eye witnesses to Christ were dewindiling in numbers ( dying) was when those that felt compelled to put into writing THEIR ( the eye witnesses) testimony.
