MOst textbooks wax poetic about th structure of water being the key part of the ability of orgamisms to survive.

The point to its polarity, its angle, its density at freezing, its high heat of vaporization, and it high specific heat. And they point to the structure of the water taht leads to its ability to do all of these things.

Of course. We know that the properties of water and specific atmospheric conditions are what give rise to the properties of an individual snowflake. But now imagine that you had no knowledge of these facts, and you were looking at a snowflake for the first time. Would you conclude that it was designed, or the result of natural processes?

My point is that it is not always trivial to determine what is designed and what is not. Merely observing an object's structure is often insufficient. More evidence is needed.
