I don’t see where any of your examples show that the phrase “x” days and “x” nights HAD to mean a period of time that didn’t include at least parts of “x” days and at least parts of “x” nights. If you still think that they do, how about picking one of them and explain why you think it does.

The links posted by Christian2, show some research.
Of course there is also the fact that NONE of the Gospels mention that it was an annual Sabbath (which they would have) or mention it to be any other type of Sabbath ( other than a sabbath that also fell on the passover week).
If one wants to argue that it was a different day, that's fine, many have based on their interpretations.
Of course NOT of that matters to the core doctrine of our Christian faith:
Christ was crucified and died, was buried and rose again.
The days, times, season, year, etc, mean very little in comparison to that.
