For the New Testament, I can't think of a better place to start than N.T. Wright's Christian Origins and the Question of God series... especially the first three books.
The New Testament and the People of God (Vol 1)
Jesus and the Victory of God (Vol 2)
The Resurrection of the Son of God (Vol 3)
